Does mānuka honey expire? Best-before dates, MGO and storage

Mānuka honey doesn't go off the way most food does, but its graded number is a different matter. The producer prints a best-before date, and that is the date their grade is meant to hold to. UMFHA tests DHA precisely so the MGO figure stays where it was tested through the life of the product. Store it cool, dry and out of the sun.

Can you eat mānuka honey after the best-before date?

A best-before date is about quality rather than safety, and honey is a famously stable food. A sealed jar a little past its date will usually look and taste like honey. What you can't assume is that the grade on the label still describes it: the producer only stands behind the printed grade to the date they printed.

Does the MGO in mānuka honey change over time?

It can, which is exactly why UMF™ grading tests more than MGO. UMFHA says DHA "is slowly converted to MGO" in the honey, and that "the higher the DHA content, the longer the life of the MGO content". A UMF™ grade sets a minimum for DHA as well as MGO so that, in UMFHA's words, the MGO levels "will remain as tested throughout the life of the product". An MGO-only jar has been measured once and carries no DHA minimum at all.

What does HMF have to do with shelf life?

HMF is the fourth UMF™ test, and UMFHA says it shows whether honey has been "overheated or stored too long". It's the freshness check. You can't see HMF from outside the jar, but you can avoid adding to it: heat is what pushes it up, so the one storage rule that really matters is keeping the jar away from heat.

How to store a jar of mānuka honey

  1. Lid on, every time

    Honey draws moisture from the air. A loose lid in a humid kitchen is the most common way a jar goes wrong.

  2. Cool and dark

    A pantry shelf is ideal. Not above the stove, not on a sunny windowsill, not in a hot car on the way home from the shops.

  3. Clean, dry spoon

    Water or crumbs in the jar are what spoil honey, not time.

  4. No need for the fridge

    Cold won't hurt it, but it makes it set hard and difficult to spoon. Room temperature in a cool spot is fine.

My mānuka has gone grainy or solid — has it expired?

No. That's crystallisation, and it's a texture change rather than spoilage — the same honey, set. Many producers sell mānuka creamed on purpose. Why honey crystallises explains it, and why we don't pass on a number for warming a jar back to runny.

When should you throw a jar out?

  • It smells sour or fermented, or fizzes. That's usually water got in. Don't eat it.
  • There's mould on the surface. Same cause, same answer.
  • A separate watery layer on top that smells off. Set honey can separate a little; off-smelling liquid is a different thing.

Does a higher grade keep longer?

The DHA minimum rises with the grade on UMFHA's table, and DHA is the shelf-life factor in their system. That's a statement about the test, not a promise about your jar. The grade table has every minimum, and the producer's best-before date is the one to go by.

How long does mānuka honey last once opened?

Kept sealed between uses, cool and dry, an opened jar lasts as well as an unopened one. Go by the producer's best-before date for the grade.

Is old mānuka honey still mānuka?

Yes — it's still mānuka honey. Whether it still meets the grade on the label past the best-before date is the part nobody can promise.

Does an MGO-only jar lose its number faster?

We can't say for a given jar. What we can say is that an MGO figure carries no DHA minimum, which is the part of UMF™ grading meant to keep MGO stable over time.

Should I buy a big jar to save money?

Only if you'll finish it before the best-before date. Bigger jars are usually cheaper per 100 g, which is why our price table shows that figure.
